January 28, 2008 by Tishia
It’s Monday on Mom’s Morning Show. That means that it is the second week of The Crock Pot Club. You’ll find the recipe below and join us on Thursday when Sandra’s here to share the instructions.
This Week’s Recipe:
Slow Cooker Potato and Canadian Bacon Chowder
Serves 2-4
Ingredients:
2 C potato, scrubbed and cubed (I leave the skins on)
1 large carrot, diced or grated
1 C leeks, chopped, white part only (I will use 2-3 whole green onions, sliced)
1 garlic clove, minced
4 C chicken broth (may use fat-free)
½ C uncooked pearl barley
1 Bay Leaf
¼ tsp thyme
¼ tsp black pepper
4 oz Canadian-style bacon (or ham)** cut into small pieces
3/4 C evaporated milk, half-and-half, or milk (may use fat-free)
* This makes a small batch. I will definatley double it.
** You may use fried bacon if you prefer.
*** I will probably add a gob (1-2 TBSP) of butter also.

This Week’s Work at Home Topic: Examine & Improve
Kelly shared about how now that she is on nightly Quad watch she has had to revamp her work day. This has caused her to examine some things in her business and come to the realization that it was time to let go of some things that were taking a huge amount of time but not producing much, if any profit. Many of you know that one of Kelly’s recent decisions was to let go of the WC Mini Mag and just yesterday she bid farewell to the Moms Talk Network forum.
It’s hard to let go of things that you’ve started and invested not only time but money in but in the long run it’s worth it to examine and improve and let go of things if you need to. So how about you - is there something you need to let go of?

I like ANTM.
Wow, I’m looking forward to seeing how my Crock Pot recipe comes out. I made a completely different recipe by the time I was done making substitutions LOL.
Started with the chicken broth, added a pound of great northern beans, about a pound or two of canadian bacon (I happened to have oodles of this on hand.) Spices, an onion all chopped into eensy weensy pieces (thank you Magic Bullet.) and a sliced, pounded clove of garlic I tied into an emptied teabag. (I hate biting down on a chunk of garlic - ick.)
I’m going to have to listen to the show again to figure out when to add the milk…I missed it.
Gosh, I seriously hope I don’t burn this soup. (I also made a double batch.)

This is one of the best Crock Pot meals I have ever had. Thank you.
